Lean Hamburgers

Kevin and I buy very lean meat, but without a little help, this makes for some dry burgers. This is our go-to hamburger recipe. We love it! We never go 'out' for burgers.

1 lb 94% lean ground beef (or for the adventurous, ground buffalo)

1/3 of an onion, diced

3-4 T Worcestershire sauce

Mix ground meat with onion and sauce. Form into patties (3 or 4) and grill about 4 minutes on each side, or until meat is medium to medium-well. Wrap the patties in foil until you are ready to serve.

I usually buy fresh whole wheat buns from sprouts. Our favorite toppings include jalapeños, pepper jack cheese, tomatoes, romaine lettuce, and your traditional, ketchup, light mayo, and mustard.

Carrot Cake

Yes, another carrot cake! My mom made this one for us for our birthdays--best I have ever had! Very moist and lots of texture. Much better than my 'light' version.

2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 large eggs
2 cups sugar
3/4 cup vegetable oil
3/4 cup buttermilk
2 teaspoons vanilla extract
2 cups grated carrot
1 (8-ounce) can crushed pineapple, drained
1 (3 1/2-ounce) can flaked coconut
1 cup chopped pecans or walnuts
Buttermilk Glaze (See Below)
Cream Cheese Frosting (See Below)

Line 3 (9-inch) round cakepans with wax paper; lightly grease and flour wax paper. Set pans aside.

Stir together first 4 ingredients.

Beat eggs and next 4 ingredients at medium speed with an electric mixer until smooth. Add flour mixture, beating at low speed until blended. Fold in carrot and next 3 ingredients. Pour batter into prepared cakepans.

Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Drizzle Buttermilk Glaze evenly over layers; cool in pans on wire racks 15 minutes. Remove from pans, and cool completely on wire racks. Spread Cream Cheese Frosting between layers and on top and sides of cake.

Buttermilk Glaze
1 cup sugar
1 1/2 teaspoons baking soda
1/2 cup buttermilk
1/2 cup butter or margarine
1 tablespoon light corn syrup
1 teaspoon vanilla extract

Bring first 5 ingredients to a boil in a large Dutch oven over medium-high heat. Boil, stirring often, 4 minutes. Remove from heat, and stir in vanilla.

Cream Cheese Frosting
3/4 cup butter or margarine, softened
1 (8-ounce) package cream cheese, softened
1 (3-ounce) package cream cheese, softened
3 cups sifted powdered sugar
1 1/2 teaspoons vanilla extract

Beat butter and cream cheese at medium speed with an electric mixer until creamy. Add powdered sugar and vanilla; beat until smooth.

Whole Wheat Pasta Salad

I make a big batch at the beginning of the week so that there are easy, go-to lunches in the fridge. This would also be a good pot-luck dish. Great for hot summer days. Add other veggies and seasonings to make it your own.

1 box (16oz) whole wheat rotini pasta
1 1/2 cups frozen peas
1/2 chopped red onion
Balsamic Vinegar
Olive Oil
Salt
Pepper
Garlic Powder

Cook pasta according to directions on the box. When there are two minutes left on the pasta, add the frozen peas to the boiling water. Once pasta and peas are cooked, strain and rinse with cold water to cool the pasta down.

Dump pasta and pea mixture into a large bowl (preferably one that can be sealed for refrigerator storage). Add onions, vinegar, olive oil, salt, pepper, and garlic powder to taste. I would guess I use ¼ cup vinegar, ¼ cup olive oil, 1 t salt, 1 T pepper, and 1 T garlic powder, but we really like our seasonings!

1 t cinnamon
1 pkg (80z) 1/3 fat cream cheese, cubed

Tilapia with Tomatillos and Avocado filled with Maque Choux

Quick Note: This is a labor intensive dish with lots of ingredients, but it is SO good!

1 1/4 to 1 1/2 lbs tilapia, 4 fillets
course salt
ground pepper
1 t ground cumin
1/2 T extra virgin olive oil, 2 turns of the pan
1 lime, halved
1/2 medium red onion, chopped
1 jalapeno or serrano pepper, seeded and finely chopped
2 or 3 large cloves of garlic, finely chopped
8 to 10 tomatillos, husks peeled and diced
1/2 bottle pale beer
2 T chopped cilantro leaves

Maque Choux:
1 T EVOO
1/2 red onion, chopped
1 jalapeno, seeded and chopped finely
1 small red bell pepper, seeded and chopped
4 ears fresh corn on the cob, husked
A sprinkle of sugar
Dash of cayenne pepper
salt
2 T butter
2 ripe avocado
1 lime, juiced

Season fish with salt, pepper, cumin, paprika. Heat a nonstick skillet over medium high heat. Add 1 tablespoon oil, 1 turn of the pan. Heat an ovenproof serving plate in a warm oven. Saute fish 3 minutes on each side or until opaque. Squeeze the juice of 1/2 lime over the fish and carefully slide the fillets onto warm platter. Cover the fish to keep it warm. Return pan to heat and add remaining tablespoon of oil, 1 turn of the pan. Over medium high heat, quickly saute the red onion, jalapeno and the garlic. Saute a minute or so, add the diced tomatillos with seeds and juices. Season mixture with coarse salt and saute the mixture of vegetables 5 minutes.

Once you get your sauce working, get a second skillet hot over moderate heat for your maque choux. Add 1 tablespoon extra-virgin olive oil (1 turn of the pan,) chopped onion, jalapeno and red bell pepper. Saute 2 or 3 minutes. Working on a plate to catch the milky juices, scrape corn off the cob. Break up the kernels and pour into the skillet. Combine corn with peppers and onions. Season with a sprinkle of sugar, a dash of cayenne pepper and salt. When mixture bubbles, reduce heat to simmer. Cut butter into pieces and stir into corn mixture. Allow mixture to simmer and cook until creamy, 5 to 7 minutes.

While corn is working, go back to your sauce for the fish. Add the beer and the juice of 1/2 lime and cilantro to the pan. Simmer sauce 5 minutes longer, then spoon hot sauce down over the fish filets. Garnish platter with a few extra sprigs of the cilantro.

Cut avocados in 1/2 lengthwise and remove pits. Squeeze lime juice over the avocados to keep them from browning and season them with a little coarse salt. Arrange on the serving plate.

To serve, fill the avocados with maque choux, allowing the corn to spill down and over the sides of the avocado onto the serving platter. The ripe avocado is spooned away from its skin with bites of creamy, warm corn and peppers. Place the avocados alongside garnished fish and enjoy with lime sorbet topped with raspberries and Grand Marnier.

Pork Chops with Cran-Apple Sauce and Parsley Potatoes

Quick Note: Sugar snap peas are a recommended side for this dish. Kevin and I prefer steamed spinach. Also, I used gala apples instead of McIntosh.

4 center cut pork loin boneless chops, each about 3/4 inch thick
Drizzle of EVOO
Grill seasoning blend or course salt and pepper
5 McIntosh apples, peeled and chunked
1/2 cup dried sweetened cranberries
1 cup concentrated canned cran-apple juice
1 1/2 lbs small red skinned potatoes, halved
2 T butter
Handful of flat-leaf parsley, chopped

Preheat a nonstick skillet over medium high heat. Drizzle chops with extra virgin olive oil, just enough to lightly coat the meat on both sides. Place the chops in a hot pan and cook 6 to 7 minutes on each side under a loose tin foil tent. The tent will reflect heat back into the pan while allowing steam to escape.

Once the chops are turned, season with seasoning blend or coarse salt and pepper, to your taste. After the chops are cooked through remove from heat and let stand for 5 minutes for juices to redistribute before serving.

In a medium saucepan, working over medium to medium high heat, combine apples, sweetened dried cranberries, and cran-apple juice concentrate. Cook apples into a chunky sauce, about 10 minutes. Remove the cran-apple sauce from heat and let it settle.

Simmer potatoes in just enough water to cover them for 10 minutes or until fork tender. Drain ad return potatoes to hot pot to dry them out. Toss potatoes with butter, parsley, and a little salt.

These ingredients are divided among 4 sandwiches:

8 slices hearty wheat artisan bread

1 small can diced artichokes
1/2 cup fresh spinach
2-4 T pesto sauce (or a mixture of basil and olive oil)
Sliced tomato (optional)
Light butter or olive oil

This sandwich is great with soups and salads.

Baked Egg Rolls

Quick Note: I am not a fan of all of the shredding, so I buy a bag of the pre-shredded coleslaw mix and count the cabbage and carrots done. You can find that next to the bagged salads. The egg rolls reheat really well in the oven or toaster oven.

1 head Chinese cabbage, outer leaves removed, shredded

2 medium carrots, peeled and shredded

2 medium garlic cloves, minced

2 medium scallions, white and green parts, chopped

1 Tbsp ginger, fresh, minced or 1/2 tsp dried

1 Tbsp low-sodium soy sauce

2 tsp cornstarch

1 tsp sesame oil

8-12 average egg roll wrappers, about 1/2 oz each

Olive oil cooking spray

Preheat oven to 350ºF. Coat a large baking sheet with cooking spray. Place cabbage in a microwavable dish and cover. Microwave on high until wilted, about 4 minutes; drain and transfer to a large bowl. Add carrots, garlic, scallions, ginger, soy sauce, cornstarch and oil; mix well.

Arrange egg roll wrappers on a clean, dry surface. Spoon cabbage mixture diagonally onto each wrapper. Fold over one corner to cover filling. Fold up both corners. Moisten edges of remaining flap with water and roll up wrapper jellyroll style until sealed. Transfer egg rolls to prepared baking sheet and coat with cooking spray.

Bake until golden brown, about 25 minutes. Serve hot.

Pan-Fried Chicken-and-Ham Parmesan

4 (1-oz.) fresh mozzarella cheese slices
Garlic-Herb Pasta
Grape Tomatoes

Preparation

2. Cook chicken in hot oil in a large ovenproof skillet over medium-high heat 3 to 4 minutes on each side or until golden. Top chicken with ham and cheese.

3. Bake chicken in skillet at 350° for 8 minutes or until cheese is melted. Serve over Garlic-Herb Pasta; top with Grape Tomatoes.

Garlic-Herb Pasta: Cook 8 oz. vermicelli according to package directions; drain. Toss with 1/4 cup Garlic-Herb Butter. Season with salt to taste. Makes 4 servings.

Garlic-Herb Butter: Stir together 1/2 cup softened butter; 1 large garlic clove, pressed; 2/3 cup chopped fresh basil; 1/4 cup chopped fresh parsley; and 1/4 tsp. salt until well blended.
